Dr. Fife’s book does a fabulous job of documenting how coconut oil, a saturated fat, is actually beneficial to your heart.
According to Fife, “All of the criticism that has been aimed at coconut oil is based primarily on the fact that it is a saturated fat, and saturated fat is known to increase blood cholesterol. However, coconut oil consumption does not raise blood cholesterol levels.”
Dr. Ian Prior and colleagues showed that islanders who eat very high amounts of saturated fat from coconut oil showed no signs of heart disease. But when they migrated to New Zealand and began eating less coconut oil and less saturated fat but more polyunsaturated fats, the incidence of heart disease and other illness greatly increased…. There is no evidence to support the notion that the saturated fat in coconut oil is harmful. Indeed, there is strong evidence now that coconut oil can help prevent heart disease.
Fife’s book explains in great detail many of the other great healing aspects of this forgotten oil. I heartily recommend you get a copy of the book and study it for yourself.
